Ingredients
  

  • 2 cups cabbage, finely shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup green onions, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • olive oil, for frying
  • 6 cloves garlic, peeled
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • salt and black pepper, to taste

Method
 

  1. Preheat oven to 375°F. Wrap garlic cloves in foil with a drizzle of olive oil and roast for 20–25 minutes until soft and golden. Let cool.
  2. In a large bowl, combine cabbage, Parmesan, breadcrumbs, egg, green onions, garlic powder, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Shape mixture into small patties, pressing firmly so they hold together.
  5. Fry in batches for 3–4 minutes per side until golden and crispy. Transfer to paper towels.
  6. Mash roasted garlic into a paste. Stir in mayonnaise, sour cream, lemon juice, salt, and pepper until smooth.
  7. Serve fritters warm with the roasted garlic dip.

Notes

Shred the cabbage finely and remove excess moisture for the best texture. Press fritters firmly so they hold together while frying. Roast garlic until soft and golden for a mellow, sweet flavor. The dip tastes even better after resting for a few hours.
