Ingredients

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes with green chilies 10 oz
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions chopped
  • 1 jalapeño sliced, optional
  • fresh cilantro for garnish, optional

Equipment

  • 9-by-13-inch baking dish Lightly greased.
  • large skillet For browning the meat and simmering the mixture.
  • wooden spoon For breaking up the meat.

Method

  1. Preheat the oven to 350°F. Lightly grease a 9-by-13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned and fully cooked, breaking it into small pieces. Drain any excess fat.
  3. Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Cook for about 5 minutes, stirring occasionally to blend the flavors.
  4. Spread half of the crushed tortilla chips in the bottom of the prepared baking dish.
  5. Spoon half of the meat mixture over the chips, then sprinkle with half of the cheddar cheese.
  6. Repeat the layers with the remaining chips, meat mixture, and cheese.
  7. Bake for 20–25 minutes, until the cheese is melted and bubbly and the casserole is heated through.
  8. Let the casserole rest for a few minutes. Top with sour cream, green onions, jalapeño slices, and fresh cilantro if desired. Serve warm.

Notes

Drain any excess fat after browning the meat. Let the meat mixture simmer for about 5 minutes so the flavors can blend. Let the casserole rest for a few minutes before topping and serving. Store leftovers covered in the refrigerator for up to 3 days.
