Ingredients

  • 2–3 firm apples, such as Gala, Fuji, or Golden Delicious
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup sugar for the batter
  • 3–4 tablespoons sugar for the caramel
  • 1/2 cup warm milk
  • 1/4 cup melted butter for the batter
  • 1 tablespoon butter for each muffin cup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 pinch cinnamon (optional)

Equipment

  • oven Preheat to 350°F.
  • Muffin pan or individual tart molds For baking the individual upside-down apple tarts.
  • mixing bowls For preparing the wet and dry batter ingredients.
  • Electric mixer or whisk For beating the eggs and sugar until lighter and slightly fluffy.
  • whisk For combining the flour, baking powder, salt, and optional cinnamon.
  • Small knife For loosening the edges of the baked tarts before inverting.
  • Toothpick For checking whether the cake batter is fully baked.
  • Oven mitts For safely handling the hot pan while turning out the tarts.

Method

  1. Preheat the oven to 350°F. Lightly grease a muffin pan or individual tart molds. Add 1 tablespoon of butter and a little of the caramel sugar to the bottom of each muffin cup. Wash and peel the apples if desired, remove the cores, and slice them thinly. Arrange the apple slices in overlapping layers inside each cup, creating a flower-like pattern. Thin, evenly cut slices will soften more consistently and help give the finished tarts their pretty appearance.
  2. In a large bowl, beat the eggs with 1/2 cup sugar until the mixture looks lighter and slightly fluffy. Stir in the warm milk, melted butter, and vanilla extract until combined. In a separate bowl, whisk together the flour, baking powder, salt, and optional cinnamon. Gradually add the dry ingredients to the wet mixture, stirring gently until a smooth batter forms. Avoid overmixing. Spoon the batter over the arranged apples, filling each cup about two-thirds full to leave room for the cakes to rise.
  3. Place the muffin pan in the preheated oven and bake for 20–25 minutes, or until the tops are lightly golden and a toothpick inserted into the cake comes out clean. The exact baking time may vary depending on your pan and the size of the portions. Check the center of a cake for doneness rather than relying on color alone.
  4. Let the tarts rest briefly after baking. Carefully loosen the edges with a small knife, then invert them while the caramel is still warm and fluid. Use oven mitts when handling the pan, and take care not to touch the hot caramel, which can cause serious burns. Allow the tarts to cool until warm before serving. Enjoy them as they are or add a spoonful of whipped cream for an extra-special finish.

Notes

Preheat the oven to 350°F. Choose firm apples such as Gala, Fuji, or Golden Delicious, and slice them evenly. Grease each muffin cup thoroughly and arrange the apple slices in overlapping layers. Beat the eggs and sugar until lighter and slightly fluffy, then add the wet and dry ingredients without overmixing. Fill each muffin cup about two-thirds full. Bake for 20–25 minutes, until lightly golden and a toothpick inserted into the cake comes out clean. Loosen the edges and invert the tarts while the caramel is still warm and fluid. Use oven mitts and avoid touching the hot caramel. Refrigerate leftovers in an airtight container for up to 3 days. Optional cinnamon may be added to the batter.
