- In a medium bowl, stir together the self-rising flour and granulated sugar until evenly combined.
- Add the lightly beaten eggs and stir until a thick batter forms.
- Fold the sweet corn kernels into the batter until evenly coated. If needed, add 1–2 teaspoons of water if the batter is too thick or a little more self-rising flour if too thin.
- Pour about 1/4 inch of vegetable or canola oil into a large skillet and heat over medium to medium-high heat until a small drop of batter sizzles immediately.
- Drop heaping tablespoons of batter into the hot oil, spacing them apart. Gently flatten each fritter to about 1/2 inch thick.
- Fry for 2–3 minutes per side until both sides are deep golden brown and the centers are cooked through.
- Transfer to a paper towel-lined plate to drain and continue frying the remaining batter in batches.
- Serve immediately while hot and crispy, or keep warm on a wire rack in a 200°F oven until ready to serve.
Notes
Use the freshest sweet corn available for the best flavor. Heat the oil until a small drop of batter sizzles immediately before frying. Fry in small batches to maintain the oil temperature, and lightly season the fritters with salt immediately after draining for the best flavor.
