Ingredients
  

  • 1 boneless turkey breast (4–6 lbs)
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1/4 cup water or chicken broth
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Method
 

  1. Place the boneless turkey breast in the slow cooker insert.
  2. In a medium bowl, whisk together the honey, low-sodium soy sauce, minced garlic, apple cider vinegar, Dijon mustard, ground ginger, and black pepper until well combined.
  3. Pour the honey garlic sauce evenly over the turkey breast, making sure it coats the top and sides.
  4. Pour the water or chicken broth around the base of the turkey.
  5. Cover and cook on Low for 6–8 hours or on High for 3–4 hours until the turkey reaches an internal temperature of 165°F at the thickest part.
  6. Carefully transfer the cooked turkey breast to a cutting board. Allow to rest for 10–15 minutes before slicing.
  7. In a small bowl, whisk together the cornstarch and cold water until completely smooth. Stir the slurry into the cooking juices in the slow cooker. Turn the slow cooker to High and cook for 5–10 minutes, stirring occasionally, until the sauce thickens to a glossy consistency.
  8. Slice the rested turkey breast and arrange on a serving platter. Spoon the warm honey garlic sauce generously over the top and serve immediately.

Notes

Use low-sodium soy sauce because the sauce concentrates during the long slow cook. Rest the turkey for the full 10–15 minutes before slicing so the juices redistribute throughout the meat. Whisk the cornstarch slurry completely smooth before adding it to the cooking juices, and always verify that the thickest part of the turkey reaches 165°F with a meat thermometer.
