- Place the shredded zucchini in a colander, sprinkle evenly with the salt, toss to coat, and let sit for 20 minutes.
- Transfer the zucchini to a clean kitchen towel and squeeze out as much moisture as possible until nearly dry.
- Sauté the onion and garlic in a skillet over medium heat for about 5 minutes until softened and lightly golden. Let cool slightly.
- Preheat the oven to 350°F and lightly coat a baking dish with cooking spray.
- In a large bowl, combine the zucchini, sautéed onion and garlic, Parmesan, mozzarella, eggs, flour, black pepper, paprika, oregano, and cayenne if using. Mix well.
- Spread the mixture evenly into the prepared baking dish and smooth the top with a spatula.
- Bake for 25–30 minutes until the top is golden and the center is set.
- Let cool for a few minutes before cutting into squares and serving.
Notes
Salt the shredded zucchini for the full 20 minutes and squeeze out as much moisture as possible before mixing to prevent a watery casserole. Allow the sautéed onion and garlic to cool slightly before adding to the eggs, and let the casserole cool for a few minutes after baking for clean slices.
