Ingredients
  

  • 2 cans (6 oz each) salmon, drained and flaked
  • 1 cup fresh spinach, finely chopped
  • 1/3 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup plain breadcrumbs
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Method
 

  1. In a large bowl, combine the drained and flaked salmon, chopped spinach, feta cheese, red onion, garlic, eggs, breadcrumbs, parsley, oregano, lemon zest, lemon juice, salt, and black pepper.
  2. Mix well until evenly combined. Let the mixture rest for 5–10 minutes so the breadcrumbs absorb moisture and the mixture firms up.
  3. Divide the mixture into 8 equal portions and shape into patties.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Cook the patties in a single layer for 4–5 minutes per side until deeply golden brown and cooked through, working in batches if necessary.
  6. Transfer the cooked patties to a paper towel-lined plate to drain briefly.
  7. Serve warm with fresh lemon wedges, tzatziki sauce, and a Greek salad or roasted vegetables.

Notes

Drain the canned salmon thoroughly before mixing to prevent the patties from falling apart. Let the mixture rest for 5–10 minutes so the breadcrumbs absorb moisture. Cook the patties undisturbed for the first 3–4 minutes on each side to develop a crisp golden crust. Refrigerate shaped patties for 15 minutes if the mixture feels too soft.
