Ingredients
  

  • 4 large burrito-size flour tortillas
  • 16 oz full-fat cream cheese, softened
  • 1/2 lb bacon, cooked crisp and crumbled
  • 3–4 fresh jalapeños, deseeded and finely diced
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, thinly sliced (optional)
  • salt and freshly ground black pepper, to taste

Method
 

  1. Cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and crumble. Pour off most of the bacon grease, leaving about 1 teaspoon in the skillet.
  2. Add the finely diced jalapeños to the skillet with the reserved bacon grease and sauté for 2–3 minutes until just tender. Allow the bacon and jalapeños to cool slightly.
  3. In a large bowl, combine the softened cream cheese, crumbled bacon, sautéed jalapeños, shredded cheddar cheese, salt, black pepper, and green onions if using. Mix until creamy and evenly combined.
  4. Lay one tortilla flat on a clean surface. Spread about 1/2 to 3/4 cup of the cream cheese mixture evenly over the entire surface, reaching all the way to the edges.
  5. Roll the tortilla tightly from one end into a firm, compact log. Repeat with the remaining tortillas and filling.
  6. Wrap each rolled tortilla log tightly in plastic wrap. Refrigerate for at least 2 hours or overnight.
  7. Unwrap the chilled logs and use a sharp serrated knife to slice gently into 1-inch rounds.
  8. Arrange the pinwheels on a serving platter and serve chilled.

Notes

Use full-fat cream cheese and let it soften completely before mixing. Sauté the diced jalapeños briefly in the reserved bacon drippings to mellow their heat and deepen their flavor. Spread the filling all the way to the tortilla edges, roll each tortilla as tightly as possible, and refrigerate for at least 2 hours or overnight. For the cleanest slices, use a sharp serrated knife with a gentle sawing motion.
