Ingredients
  

  • 1 lb carrots, peeled and cut into sticks
  • 1 cup apple cider vinegar
  • 1/2 cup honey
  • 2 cloves garlic, smashed
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp whole black peppercorns

Method
 

  1. Add the apple cider vinegar, honey, red pepper flakes, salt, whole black peppercorns, and smashed garlic to a medium saucepan.
  2. Heat over medium heat, stirring occasionally, until the honey and salt are fully dissolved and the brine reaches a gentle simmer.
  3. Add the carrot sticks directly to the hot brine. Stir gently to coat the carrots evenly.
  4. Remove from heat and allow the carrots to cool in the brine for about 10 minutes.
  5. Carefully transfer the carrots and all of the brine to a clean glass jar, making sure the carrots are completely submerged.
  6. Seal the jar tightly and refrigerate for at least 24 hours to allow the flavors to fully develop.
  7. Serve chilled as a snack, appetizer, or crunchy accompaniment to sandwiches, burgers, grilled meats, or salads.

Notes

Cut the carrots into consistent sticks so they pickle evenly. Make sure the honey and salt fully dissolve before adding the carrots, and allow the carrots to cool in the brine for the full 10 minutes before transferring them to the jar to help preserve their crisp texture. Keep the carrots completely submerged, refrigerate at all times, use a clean utensil when serving, and enjoy within 3 weeks for the best quality.
