Ingredients
  

  • 1 cup raw honey
  • 1 tbsp fresh ginger, finely grated
  • 1 fresh lemon, juiced

Method
 

  1. Add the raw honey, finely grated fresh ginger, and juice of one fresh lemon to a clean glass jar. Make sure the ginger is finely grated so it distributes well throughout the honey.
  2. Stir thoroughly until the lemon juice and ginger are evenly distributed throughout the honey. Scrape the bottom and sides of the jar as you stir so no thicker honey remains unmixed.
  3. Cover the jar and refrigerate overnight. This resting time gives the honey, ginger, and lemon a chance to blend into a more cohesive syrup.
  4. Stir the syrup before using. Do not strain out the ginger pieces; they add flavor as the syrup rests. Spoon the syrup into hot tea, or mix a spoonful with a little warm water before adding sparkling water for a refreshing drink.

Notes

Use fresh ginger and freshly squeezed lemon juice for the best flavor. Grate the ginger finely and stir thoroughly so the lemon and ginger distribute evenly through the honey. Refrigerate the covered jar overnight and keep the ginger pieces in the syrup rather than straining them out. Always use a clean spoon and keep the syrup refrigerated.
