- In a large Dutch oven or soup pot over medium-high heat, cook the ground beef and diced onion together, breaking the beef into small crumbles until browned and the onion is tender. Drain any excess grease.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the carrots, celery, beef broth, diced tomatoes, potatoes, green beans, tomato paste, Worcestershire sauce, Italian seasoning, salt, and black pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 25 minutes until the vegetables are tender.
- Stir in the frozen peas, frozen corn, and chopped parsley.
- Cook for another 3–5 minutes until the peas and corn are heated through.
- Taste and adjust seasoning if needed. Serve hot with crusty bread or crackers.

Brown the beef well before adding the liquids to develop deep flavor. Drain excess grease for a cleaner broth. Add the peas and corn only during the final few minutes to keep them vibrant and tender.
