  • 1 cup salted butter, cubed
  • 1 cup granulated sugar
  • 1 large egg
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 box (3.9 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1 cup heavy whipping cream
  • 3/4 tsp almond extract
  • fresh strawberries, blueberries, raspberries, kiwi, peaches, bananas, or other seasonal fruit

Method
 

  1. Preheat the oven to 350°F. Lightly grease a half-sheet pan or line it with parchment paper.
  2. Cream together the butter and sugar. Mix in the egg, vanilla extract, and almond extract.
  3. Add the flour and baking powder and mix until a soft dough forms.
  4. Press the dough evenly into the prepared pan.
  5. Bake for 12 minutes until the edges are lightly golden. Cool completely.
  6. Whisk together the cold milk, instant vanilla pudding mix, and almond extract until thickened.
  7. Whip the heavy cream until stiff peaks form.
  8. Fold the whipped cream into the pudding until smooth.
  9. Spread the filling evenly over the cooled cookie crust.
  10. Arrange the fresh fruit over the filling in your desired pattern.
  11. Refrigerate for at least 1 hour before slicing and serving.

Notes

Allow the cookie crust to cool completely before adding the filling or it will melt and become runny. Pat all fruit dry before arranging to prevent excess moisture, and refrigerate for at least 1 hour before serving for clean slices and the best texture.
