  • 1/3 cup half-and-half
  • 1 cup diced cooked ham
  • 3/4 cup chopped red bell pepper
  • 2/3 cup shredded sharp cheddar cheese
  • Salt and black pepper to taste

Method
 

  1. Preheat the Oven: Set your oven to 350°F (175°C). Lightly grease a muffin tin or use silicone liners.
  2. Whisk the Eggs: In a large bowl, whisk together the eggs and half-and-half until smooth. Season with salt and black pepper.
  3. Add Fillings: Stir in the diced ham, chopped red bell pepper, and shredded cheddar cheese.
  4. Fill the Muffin Cups: Pour the egg mixture evenly into each muffin cup, filling about ¾ full.
