- Slice cucumbers thinly using a knife or mandoline.
- Finely chop the onion and set aside.
- Whisk together Greek yogurt, mayonnaise, Dijon mustard, lemon juice, garlic, salt, and pepper until smooth.
- Add cucumbers and onion to the bowl and toss gently to coat.
- Cover and refrigerate for 15–30 minutes to chill and develop flavor.
- Garnish with fresh parsley and serve cold.
Notes
Salt cucumbers lightly and let sit for 10 minutes to remove excess water. Use full-fat Greek yogurt for best texture. Chill for at least 15 minutes before serving for best flavor. Add parsley just before serving to keep it fresh.
