Dump and Go Crockpot Chicken and Dumplings

Ingredients
  

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) chicken broth
  • 1 cup frozen mixed vegetables
  • 1 can (8-count) refrigerated biscuit dough
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • salt and black pepper, to taste
  • 1/2 tsp paprika (optional)
  • 1/2 cup milk or half-and-half (optional)

Method
 

  1. Place the chicken breasts in an even layer in the bottom of the crockpot.
  2. In a medium bowl, whisk together the cream of chicken soup, chicken broth, frozen mixed vegetables, onion powder, garlic powder, dried thyme, salt, black pepper, and paprika if using.
  3. Pour the mixture evenly over the chicken, making sure the chicken is fully coated.
  4. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until the chicken is completely cooked through and very tender.
  5. About 30 minutes before serving, shred the chicken directly in the crockpot using two forks. Stir into the gravy and vegetables. Stir in the milk or half-and-half if using for extra creaminess.
  6. Cut each refrigerated biscuit into quarters or smaller pieces.
  7. Gently place the biscuit pieces in an even layer over the chicken mixture. Lightly press into the sauce but do not stir.
  8. Replace the lid and cook on HIGH for 25–35 minutes until the dumplings are puffed and cooked through with no doughy centers.
  9. Taste and adjust seasoning as needed. Serve warm directly from the crockpot.

Notes

Place the biscuit pieces gently on top of the chicken mixture and do not stir them into the gravy. They need to steam above the liquid to become light and fluffy. For extra creaminess, stir in the optional milk or half-and-half after shredding the chicken.
