- Brown the ground beef in a skillet over medium heat, breaking it into small crumbles as it cooks. Continue until the beef is cooked through, then drain any excess grease.Draining the excess grease keeps the finished soup from becoming unnecessarily oily while allowing the beef to provide plenty of savory flavor.
- Add the browned ground beef to the slow cooker. Pour in the diced tomatoes and ranch-style beans, then add the drained corn and frozen mixed vegetables.
- Add the diced potato and pour in the beef broth. Sprinkle the taco seasoning and ranch seasoning mix over the ingredients. Stir everything together until the seasonings are well distributed throughout the soup.
- Cover and cook on LOW for 6–7 hours, or until the potatoes and vegetables are tender. Once everything is cooked, give the soup a good stir and ladle it into bowls while hot.The finished soup should be hearty and brothy, with tender potatoes and vegetables throughout and plenty of beef in every serving.
