Ingredients

  • 2 lb chicken wings, split and tips removed
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (optional)

Equipment

  • baking sheet
  • wire rack
  • mixing bowl
  • saucepan
  • tongs

Method

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Pat chicken wings completely dry with paper towels.
  3. Toss wings with baking powder, salt, pepper, and paprika until evenly coated.
  4. Arrange wings in a single layer on the rack, ensuring they do not touch.
  5. Bake for 40–45 minutes, flipping halfway through, until golden and crispy.
  6. Melt butter in a saucepan, add garlic, and cook briefly until fragrant.
  7. Remove from heat and stir in Parmesan cheese until combined.
  8. Toss hot wings in the garlic Parmesan sauce until fully coated.
  9. Garnish with parsley and serve immediately.

Notes

Pat wings completely dry before baking for maximum crispiness. Use aluminum-free baking powder to avoid any aftertaste. Bake on a wire rack for even airflow and crisp texture. Toss wings in sauce immediately while hot for best coating.
