Ingredients

  • 12 oz white cabbage thinly sliced
  • 2 medium red apples cored and cut into thin strips
  • 1/2 cup chopped nuts such as walnuts or pecans
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon mild mustard
  • 1 teaspoon honey optional
  • salt and black pepper to taste

Equipment

  • large mixing bowl For tossing the salad.
  • small bowl For whisking the dressing.
  • whisk For making the dressing smooth.
  • sharp knife For slicing the cabbage and apples.

Method

  1. Wash the cabbage and dry it thoroughly. Slice it into thin strips and place it in a large mixing bowl.
  2. Wash and core the apples, then cut them into thin matchsticks. Toss them with the lemon juice to help prevent browning.
  3. In a separate bowl, whisk together the Greek yogurt, mayonnaise, mustard, honey if using, a pinch of salt, and black pepper until smooth.
  4. Add the apples and dressing to the cabbage. Toss gently until everything is evenly coated.
  5. Cover and refrigerate for 20 minutes to allow the flavors to blend.
  6. Just before serving, stir in the chopped nuts so they stay crunchy. Taste and adjust the seasoning if needed.
  7. Serve chilled alongside roasted chicken, baked fish, or your favorite family meal.

Notes

Dry the cabbage thoroughly so the dressing stays creamy. Toss the apples with the lemon juice to help prevent browning. Add the chopped nuts just before serving so they stay crunchy. Store leftovers in an airtight container in the refrigerator for up to 2 days.
