Method
- Wash the celery stalks thoroughly and dry them well. Trim off the ends, then cut each stalk into 2–3-inch pieces. Try to make the pieces similar in size so they are easy to fill and arrange on a serving platter.
- In a mixing bowl, combine the softened cream cheese, finely chopped dried cranberries, chopped pecans, sliced green onions, honey, garlic powder, black pepper, and a pinch of salt.
- Stir everything together until the mixture is creamy and evenly combined. Make sure the cranberries, pecans, and green onions are distributed throughout the cream cheese rather than sitting in separate pockets.
- Spoon the cream cheese mixture generously into each celery piece. For a neater presentation, transfer the filling to a piping bag or a small zip-top bag with the corner snipped off and pipe it into the celery.
- Sprinkle the filled celery pieces with extra chopped cranberries and pecans if desired. A little fresh parsley can also be added for a pop of green and a fresh finish.
- Serve the celery bites immediately, or refrigerate them for 20–30 minutes if you prefer a firmer, chilled texture. Arrange them on a platter just before serving.
Notes
Dry the celery thoroughly before filling so the cream cheese mixture stays thick. Soften the cream cheese completely for easy mixing and piping. The celery bites can be served immediately or chilled for 20–30 minutes. For the crispest texture, prepare the filling ahead and assemble shortly before serving. Store assembled bites refrigerated in an airtight container and enjoy within 1–2 days.
