- Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large bowl, combine the mashed potatoes, shredded cheese, egg, chopped green onions if using, garlic powder, salt, and pepper. Mix until everything is evenly incorporated.
- Scoop out portions of the mixture and shape them into small balls or patties, about 1–2 inches wide.
- Roll each potato puff in the breadcrumbs, making sure the outside is evenly coated.
- Arrange the coated puffs on the prepared baking sheet with a little space between each one. Lightly spray the tops with olive oil or cooking spray.
- Bake for 20–25 minutes, until the outside is golden brown and crisp.
- Remove from the oven and allow the puffs to cool slightly before serving warm.
Notes
Use cold or chilled mashed potatoes for easier shaping. If the potatoes are especially soft or creamy, chill the mixture before forming the puffs. Keep the puffs about 1–2 inches wide and leave space between them on the baking sheet for better browning and crispness. Reheat leftovers in the oven or air fryer for the best texture.
