- Preheat oven to 400°F. Generously grease a standard 12-cup muffin tin.
- In a large bowl, combine the mashed potatoes, cheddar cheese, eggs, chopped chives, salt, and black pepper.
- Mix thoroughly until evenly blended.
- Spoon the mixture into the prepared muffin cups, filling each nearly to the top and pressing lightly to remove air pockets.
- Bake for 25–30 minutes until the tops are golden brown and lightly crisp.
- Remove from the oven and allow the puffs to cool in the muffin tin for 5 minutes.
- Carefully loosen the edges with a small spatula or butter knife, remove from the tin, and serve warm.
Notes
Use cold leftover mashed potatoes for the best structure and texture. Grease the muffin tin generously to prevent sticking. Allow the puffs to cool in the pan for 5 minutes before removing so they can firm up properly. Sharp cheddar provides the most flavorful result.
