Ingredients

  • 1 lb ground beef
  • 1 medium head cabbage, chopped
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 14.5 oz diced tomatoes with juices
  • 1 cup beef broth
  • 1 tsp Italian seasoning
  • salt and black pepper to taste
  • 2 cups shredded cheddar cheese

Equipment

  • large skillet
  • baking dish
  • spoon
  • knife
  • cutting board

Method

  1. Preheat oven to 350°F and grease a baking dish.
  2. Cook ground beef, onion, and garlic in a skillet over medium heat until browned. Drain excess grease.
  3. Add chopped cabbage and cook for 5 minutes until slightly softened.
  4. Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Transfer mixture to baking dish and pour beef broth evenly over top.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for another 10–15 minutes until cheese is melted and golden.
  9. Let rest for 5 minutes before serving.

Notes

Drain excess grease after browning beef to avoid a greasy casserole. Use cooked, cooled rice for best texture. Do not skip the uncovered baking stage to achieve a golden cheese crust. Let the casserole rest before serving for cleaner slices.
