Caprese Pasta Salad

Ingredients
  

  • 8 oz whole grain pasta such as penne or rotini
  • 2 cups cherry tomatoes halved
  • 1 cup fresh mozzarella balls bocconcini, halved
  • 1/4 cup fresh basil leaves torn
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Sea salt to taste

  • Freshly ground black pepper to taste

Method
 

Cook the Pasta:
  1. Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
Combine Ingredients:
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, and torn basil leaves.
Dress the Salad:
  1. In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, sea salt, and black pepper. Pour the dressing over the pasta salad and toss to combine well.
