Caesar Pasta Salad

Ingredients
  

  • 3 cups romaine lettuce chopped
  • 8 ounces pasta penne, rotini, or bowtie
  • ½ cup Parmesan cheese grated
  • 1 lemon juiced and zested
  • ¼ cup Caesar dressing store-bought or homemade
  • 2 tablespoons olive oil
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
Optional Add-ins:
  • 1 cup grilled chicken for protein
  • ½ cup croutons for crunch
  • ¼ teaspoon red pepper flakes for a spicy kick

Method
 

Cook the Pasta:
  1. Boil pasta in salted water according to package instructions until al dente.
  2. Drain and toss with 1 tablespoon olive oil to prevent sticking. Let cool.
Prepare the Dressing:
  1. In a bowl, whisk together Caesar dressing, lemon juice, lemon zest, black pepper, and 1 tablespoon olive oil.
Assemble the Salad:
  1. In a large bowl, combine romaine lettuce, cooled pasta, and Parmesan cheese.
  2. Drizzle the Caesar dressing mixture over the salad and toss until well coated.
Serve & Enjoy:
  1. Garnish with extra Parmesan and a sprinkle of black pepper.
  2. Serve chilled or at room temperature.

Notes

  • For a healthier version: Use whole wheat pasta and Greek yogurt-based Caesar dressing.
  • For extra crunch: Add homemade croutons or toasted pine nuts.
  • Best served fresh: If making ahead, store the dressing separately and toss before serving.
