- Preheat the oven to 350°F. Grease and flour two 9x5-inch loaf pans.
- In a large bowl, beat together the sugar, eggs, corn oil, and vanilla until smooth.
- In a separate bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the shredded zucchini, blueberries, and walnuts if using until evenly distributed.
- Divide the batter evenly between the prepared loaf pans and smooth the tops.
- Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the loaves in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve plain or with butter.
Notes
Pat the blueberries completely dry before folding them into the batter and toss them with a little flour to help prevent sinking. Mix the batter only until the dry ingredients disappear to keep the bread tender. Check for doneness beginning at 60 minutes and cool completely before slicing for the cleanest cuts.
