Method
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper if desired. Wash the Russet potatoes and cut them into long, thin strips. Pat the potato pieces thoroughly dry with a clean kitchen towel. Place the fries in a large mixing bowl, add the olive oil, minced garlic, Italian seasoning, salt, and black pepper, and toss until evenly coated.
- Spread the seasoned potato strips across the prepared baking sheet in a single layer, leaving space between the pieces so hot air can circulate. Avoid overcrowding the tray. Use a second baking sheet if necessary so the potatoes roast rather than steam.
- Bake the fries for 30 minutes, turning them halfway through. Remove the baking sheet from the oven and sprinkle the fries with grated Parmesan cheese and dried parsley flakes. Toss gently, then return the tray to the oven for another 10–15 minutes, until the fries are golden, crispy around the edges, and tender inside. Watch closely during the final minutes because thinner fries and exposed garlic can brown quickly.
- Transfer the finished fries to a serving bowl or platter while hot. Sprinkle with extra Parmesan if desired and serve immediately with your favorite dipping sauce, such as ranch dressing, garlic aioli, or mayonnaise-based dip.
Notes
For the crispiest fries, cut the potatoes evenly, pat them thoroughly dry, and arrange them in a single layer without overcrowding the baking sheet. Turn the fries halfway through baking. Add the Parmesan cheese and dried parsley after the initial 30 minutes, then bake for another 10–15 minutes. Serve immediately for the best texture. Optional variations include spicy fries with cayenne or red pepper flakes, smoky fries with smoked paprika, extra-cheesy fries with more Parmesan, fresh herb fries, or a sweet potato version. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven or air fryer.
