Ingredients
  

  • 4 avocados, slightly firm
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1 1/2 cups panko breadcrumbs
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp salt

Method
 

  1. Preheat oven to 400°F and lightly grease a baking sheet with cooking spray.
  2. Slice avocados in half, remove pits, cut into wedges, and peel the skin.
  3. Set up three bowls: flour, beaten eggs, and panko mixed with Italian seasoning, garlic powder, and salt.
  4. Coat each avocado wedge in flour, dip in egg, then press into seasoned panko until fully coated.
  5. Place coated wedges on baking sheet in a single layer with space between each.
  6. Lightly spray tops with cooking spray.
  7. Bake for 12–14 minutes until golden and crispy.
  8. Serve immediately with your favorite dipping sauce.

Notes

Use slightly firm avocados to prevent them from falling apart during breading. Press the panko coating firmly to help it stick. Do not overcrowd the baking sheet to ensure crispiness. Best served immediately while warm and crispy.
