These apple pie enchiladas are soft flour tortillas filled with sweet cinnamon-spiced apple pie filling, rolled up and baked in a rich buttery brown sugar sauce that soaks in and caramelizes around the edges.   • 6 flour tortillas (8-inch)
  • 1/2 cup unsalted butter
  • 1/2 cup white granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup water
  • 1 tsp ground cinnamon

Method
 

  1. Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with butter or cooking spray.
  2. Spoon the apple pie filling evenly down the center of each flour tortilla.
  3. Roll each tortilla tightly around the filling and place seam-side down in the prepared baking dish, arranging snugly in a single row.
  4. In a medium saucepan over medium heat, melt the butter. Add the white sugar, brown sugar, water, and ground cinnamon.
  5. Stir continuously until smooth, the sugars are fully dissolved, and the mixture is slightly bubbly. Remove from heat.
  6. Pour the warm buttery cinnamon sauce evenly over all the rolled tortillas.
  7. Bake uncovered for 30–35 minutes until golden and the sauce is bubbling and caramelized around the edges.
  8. Cool for a few minutes before serving warm with vanilla ice cream if desired.

Notes

Use a good-quality, thick apple pie filling for the best result. Roll each tortilla as tightly as possible and place the enchiladas snugly together seam-side down so they stay compact during baking. Make sure every tortilla is covered with the buttery cinnamon sauce before baking. If the edges caramelize too quickly, tent loosely with foil for the final 10 minutes. Serve warm with vanilla ice cream for the best contrast.
