Ingredients

  • 1 lb sausage meat or pork sausage, casings removed
  • 1 small onion, finely grated or chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh parsley, chopped (optional)
  • 1 sheet puff pastry, thawed
  • 1 large egg
  • 1 tbsp milk

Equipment

  • air fryer
  • large mixing bowl
  • lightly floured work surface
  • Rolling Pin Optional if the puff pastry needs light rolling.
  • meat thermometer Use to verify the sausage filling reaches 160°F.

Method

  1. In a large bowl, combine the sausage meat, grated onion, minced garlic, salt, black pepper, dried thyme, paprika, Worcestershire sauce, and parsley if using. Mix until evenly and thoroughly combined.
  2. Place the thawed puff pastry on a lightly floured surface. Cut it lengthwise into two equal long strips.
  3. Divide the sausage mixture into two equal portions and shape each into a long log. Place one sausage log along the edge of each pastry strip.
  4. Roll the pastry tightly around the sausage filling. Brush the edge of the pastry with a little beaten egg or water and press firmly to seal the seam.
  5. Cut each roll into 3–4 equal pieces depending on your preferred size.
  6. Whisk together the egg and milk to make the egg wash. Brush the tops and sides of each sausage roll generously with the egg wash.
  7. Preheat the air fryer to 356°F for 3–5 minutes.
  8. Arrange the sausage rolls in a single even layer in the air fryer basket, leaving space between each one for air circulation.
  9. Air fry for 12–15 minutes, turning or rotating the rolls halfway through, until the pastry is deeply golden brown and the sausage filling reaches an internal temperature of 160°F.
  10. Remove from the air fryer and allow to cool for 5 minutes before serving. Serve warm with ketchup, mustard, barbecue sauce, or your favorite dipping sauce.

Notes

Keep the puff pastry cold until ready to use. Grate the onion for an evenly distributed, moist filling, seal the pastry seam firmly, and place the rolls seam-side down in the air fryer basket. Do not overcrowd the basket, and check that the sausage filling reaches 160°F internally before serving. Allow the rolls to cool for 5 minutes before serving.
