- Preheat oven to 350°F. Line a large baking sheet with parchment paper.
- Place the cottage cheese in a blender or food processor and blend until completely smooth and creamy.
- Transfer the blended cottage cheese to a large bowl. Add the almond flour and Parmesan cheese.
- Mix until a soft, cohesive dough forms.
- Scoop approximately 1 teaspoon of dough onto the prepared baking sheet, spacing portions apart.
- Using the back of a spoon or your fingers, flatten each portion into a thin round about 1/8-inch thick.
- Bake for 15–18 minutes until the edges are golden and the crackers are set and lightly crisp.
- Remove from the oven and allow the crackers to cool completely on the baking sheet before serving.
Notes
Blend the cottage cheese completely smooth before mixing to ensure an even texture. Flatten each cracker to approximately 1/8-inch thick for maximum crispness. Allow the crackers to cool completely on the baking sheet before serving, as they continue to crisp while cooling.
